Unicorn Superfood Smoothie Bowl

This smoothie is stunning, delicious and incredibly nourishing. The pitaya gives this smoothie bowl its magical color and nutrient boost. The pitaya provides fiber and magnesium a mineral most people are severely deficient in due to poor soils. Healthy levels of magnesium help us calm our nerves, and relieves muscle aches and spasms. Pitaya is also high in vitamin C, it strengthens our bones, speeds up healing, detoxifies, and keeps our eye sight sharp. The pitaya is not the only superfood in this smoothie bowl that brings all the Unicorns to the yard. Bee pollen, coconut, spirulina, and blueberries all add to this smoothie's superhero status.
Ingredients
  • Pitaya (magenta layer):
  • 2 packs of frozen pitaya
  • 1 cup of frozen mango
  • ½ cup of fresh or frozen raspberries
  • 1 frozen banana
  • 4 to 6 oz of coconut water, coconut milk or any of your favorite juices or nondairy milk- add liquid slowly and add just enough to achieve a thick but smooth consistency
  • Blueberry- spirulina (Blue/green layer):
  • 1.5 cups of frozen blueberries
  • 1 frozen banana
  • 1 teaspoon of spirulina
  • 1 cup greek yogurt or your favorite non-dairy yogurt
  • 1 tablespoon coconut oil or coconut butter
  • 4 to 6 oz of coconut milk, or your favorite juice or non-dairy milk (add liquid slowly and only until you achieve a well blended but thick consistency)
  • Toppings:
  • bee pollen
  • coconut flakes
  • fresh fruit
  • Optional:
  • hemp seeds
  • organic cereal or granola
  • chia seeds
  • tumeric powder
Instructions
  1. Tools:
  2. Recommended to use a high powered blender such as Vitamix or a Blendtec
  3. Spatula to transfer smoothie into bowls

  5. Place all ingredients for the magenta layer in the blender and approx 2 oz of the fluid you choose to use.
  6. Turn blender on low and slowly increase speed.
  7. Add fluid slowly until a thick but smooth consistency is achieved.
  8. Pour magenta smoothie in large bowl or mason jar and set aside.
  9. Rinse the blender canister and repeat the same steps as mentioned above for the blue-green layer.
  10. Pour the blue-green layer evenly into 4 bowls and over to one side of the bowl
  11. Pour the magenta layer evenly into the 4 bowls opposite to the blue-green layer
  12. Sprinkle and decorate with your favorite toppings
