Beet & Goat Cheese Salad

Think you are not a fan of beets? Try this recipe and you
may have a change of heart.
Health benefits of beets: beet greens- are high in calcium, iron,
and vitamins A and C. Beetroots- are an excellent source of folic
acid and a very good source of fiber, manganese, potassium,
phosphorous and vitamin B6. Beets are great for Detoxifying
the body. Beets also have betacyanin, which is a powerful
cancer-fighting agent.
¼ cup Balsamic vinegar
3 Tablespoons shallots-thinly sliced or chopped
1 Tablespoon honey
1/3 cup Extra Virgin olive oil
Salt and pepper to taste
6 medium beets, cooked and quartered
6 cups arugula or spring salad mix
½ cup pine nuts roasted
¼ cup dried cranberries
1 avocado sliced and cubed
3 oz fresh goat cheese- coarsely crumbled
Whisk vinegar, oil, salt, pepper and honey in a bowl. Put the
beets and shallots in an oven pan/baking dish-coat with the
portion of the dressing and broil/bake, stirring occasionally to
caramelize the shallots. Set aside and cool. Roast the pine nuts
in olive oil, to golden brown color.
Toss arugula/spring mix, cranberries and pine nuts in a bowl
with the remaining dressing. Add the avocado, goat cheese and
beet/shallot mixture to the salad and serve. Quick and delicious-
