Black Bean Salsa – Good Clean Health Recipe

Black Bean Salsa. I have been making it for years. When I bring this salsa to a potluck, gathering or BBQ it is devoured. If you decide to make this and I highly suggest you do, be prepared to share the recipe. They WILL ask for it. I feel like I am giving away a prized possession…. But, I love you guys so here goes….


-2 (15oz) can of black beans, rinsed and drained

-1 (140z) can whole kernel corn, drained

-2 large organic tomatoes, chopped

-2 large avocados

-1 jalapeno, seeded and minced- with seeds and ribs removed it is not spicy when you remove these. My kids eat the salsa with the jalapeno in it. No problemo.

-1/4 cup chopped organic cilantro- a little more if you love cilantro (I do). Bonus: it pulls extra metals out of your body :)

-3 cloves garlic, minced

-1/2 large red onion chopped

-4 Tablespoons fresh lime juice

-1/4 cup olive oil

-1/4 cup red wine vinegar

- Sea salt and pepper to taste

combine all ingredients in a large bowl

cover and chill 1 hour or more

and Voila!

Serve with regular tortilla chips sprinkled with fresh lime. If you have left overs (I doubt you will) you can use the salsa to top grilled fish, in fish tacos, added to brown rice or quinoa to make a side salad, added to scrambled eggs and wrapped in a tortilla for an awesome breakfast burrito.
