Healthy Paleo / Vegan Super Easy Pumpkin Muffins

The best way to get over the reality that summer will soon come to an end is to eat #allthepumpkinthings . With school starting it is time to make healthy dinners and breakfast and freeze them so as our schedules get busier and the days get shorter we don't sacrifice health or taste. These muffins are moist, gluten free, protein packed whole food decadence. 😋 🎃Aaannnnddd....they are done in 25min including baking. 🍁 recipe🍁 1 cup pumpkin purée 🍁1 cup nut butter (I used tahini which is a seed butter actually ) 🍁1/3 cup grade B maple syrup🍁1 egg (to make vegan version use chia egg replacement) 2 tsp pumpkin spice🍁1.5 tsp baking soda🍁 1/2 cup dark chocolate or vegan chocolate chips. Bake 15-20 min at 325 in cupcake tin lined with coconut oil or muffin tins. Crazy good, crazy easy. #omg #sogood #goodcleanblog
