QUICK Yummy Shrimp
I am really into coconut these days. I love to use coconut oil because it has a higher smoke point. Which makes it great for stir-fries like this one.
This recipe is QUICK, DELISH and HEALTHY!
1lb Wild caught shrimp-frozen is fine
1 Red pepper-diced
1 yellow onion-diced
4 big handfuls of spinach leaves (organic if possible)
2 Tablespoons coconut oil
2 Tablespoons coconut milk
1/2 Tablespoon curry powder (more to taste)
Pinch of Turmeric (optional)
Sea salt and pepper
In a large skillet, heat coconut oil over medium heat. Add the onions and bell peppers and cook until just tender. Add the shrimp and the spinach and cook for 3-4 min until the shrimp curls up and is no longer opaque in the middle. Add the coconut milk and spices, mix well and serve! Serve it with brown rice or crusty bread to soak up the yummy sauce. Enjoy!
