Alfajores are a scrumptious Latin cookie.
The problem: Traditionally they are heavy on the sugar, processed flour and dairy.
The solution: Substitute the not so healthy parts with nourishing ingredients that respect the original flavors of vanilla, coconut and dulce de leche caramel.
Here is a healthy version of the Alfajor. It is Raw, Vegan and out of this world.
The raw version of this recipe was adapted from the vanilla macaroon recipe in Matthew Kenney’s Everyday Raw Deserts. The caRAWmel is my original recipe and is so versatile! You can use this caRAWmel as a dip for fresh fruit icing for cake and cupcakes or as a crepe filling. Just a teaspoon full gives you a hardy blast of nutty-vanilla splendor.
- Measuring cups and spoons
- Cookie sheet
- Dehydrator (optional)
- Food processor or high-powered blender
A juice glass to flatten cookie
For the cookie:
- 1-cup coconut flour
- 1 cup of almond flour (or use cashew or another cup of coconut four)
- ¼ cup of finely shredded coconut for the cookie dough (optional)
- ¼ cup of date sugar
- 2 tablespoons of brown rice syrup
- 3 tablespoons of raw honey
- 1-teaspoon pure vanilla extract
- 1-cup fresh coconut flakes for decorating the cookies
For the caRAWmel:
- 1 ½ cups raw cashews or natural cashew butter if you do not own a high-speed blender
- ½ cup pure maple syrup
- ½ cup brown rice syrup
- 1 vanilla bean
Making the cookies:
Whisk dry ingredients. Then add liquids to the dry ingredients (except the coconut flakes that are used to decorate the outside of cookies). You want to form dough that comes together easily. Add a tablespoon of water at a time if dough needs more moisture to form. Scoop out a tablespoon of dough, form a sphere. Repeat with rest of the dough. Then flatten each with the base of the juice glass. If you have a dehydrator you can put cookies in a dehydrator for 4-6 hours. If you don’t, place cookies on cookie sheet in warm oven (less than 180F) for 20 min just until outside of cookie is slightly crisp/dry and the inside is soft.
Making the caRAWmel
Place all ingredients into high-speed blender until achieve a smooth consistency.
If you do not have a high-speed blender place the natural cashew butter in food processor and add the rest of the ingredients to it and blend.
Place a spoonful of the caRAWmel on half of the cookies
Place another cookie on top to make a “sandwich” Press down gently. Roll the sides of cookie sandwich through coconut flakes.
Now you have a delicious, nutritious beautiful treat!
