Watermelon screams SUMMER! It is that natural burst of refreshing cool in late spring and summer that makes it one of my favorite seasonal fruits. It brings me back to the lazy days of summer vacation where pulp-less watermelon rinds could be found strewn about the neighborhood BBQ and children's smiles were made even sweeter by the residue of pink summer goodness. Watermelon is a juicy, refreshing slice of heaven on a hot day. I recently made this simple watermelon cooler to punctuate a fun-filled family beach day. We had a thirst that seems to only come after a day at the beach, and this watermelon cooler simply hit the spot!
- Approx 4 cups of seeded watermelon
- 4 Tablespoons of lime juice
- Zest of 1 lime
- 1 cup water
- Mint leaves and blackberry for garnish (optional)
