We all have our vice.  Mine is cookie dough, the raw type.  When I make cookies with my kids I tell them there is no eating the raw dough and then I turn around and sneak a bite when no one is looking.  So you can imagine what a solution this recipe has been for our family me.

Reasons I Love These Little Bites:
  1. They are made with nourishing ingredients
  2. They contain protein from the nuts
  3. They are so easy to make, you do not even need to bake them
  4. Awesome on the go snack
  5. They are guiltless
  6. They are so adaptable!!
  7. They taste like raw  chocolate chip cookie dough. duh
  8. Did I mention they are healthy?
  9. They are beyond. amazing.
I am not the only one around here who loves them. They are a great after school snack for the kids and a midnight snack for the hubby.
Chocolate Chip Cookie Dough Bites
recipe inspired by Oh She Glows
  • 2/3 Cups raw cashews
  • 1/3 Cup  oats- gluten-free if that meets your needs
  • a pinch of sea salt
  • 1 Vanilla bean or 1.5 teaspoons of vanilla extract
  • 2 Tablespoons of Pure Maple Syrup
  • 1 Tablespoon Agave nectar
  • 1 Teaspoons coconut oil (optional)
  • High quality dark chocolate chips-at least 60% cacao
*you can add Maca powder, chia seeds, greens powder, flax or hemp seeds to "superfood" ize these.
Don't be scared to experiment and adapt.
To make the bites:
Put cashews and oats in high powered Blender (Vitamix) type or a food processor blend/process to a fine meal.  Then add  the rest of the ingredients except the chocolate chips and blend/process until a nice dough consistency forms.  Then stir in chocolate chips.  If dough is too sticky place in fridge for 10-15min.  Then,  put dough on working surface and take a tablespoon amount at a time of dough and roll into cute little cookie bites. Refrigerate or freeze. Will keep well in freezer for a few weeks. ENJOY------->

Chocolate Chip Cookie Dough Bites + Coconut ice cream = Bliss

You can simply pop them in your mouth or you can pair them with coconut ice cream. Use them to decorate a cake, put in a smoothie,  toss into your oatmeal for an extra special treat. Yes!  Eat them for breakfast I don't see a problem.... I'm not worried you will find ways to eat these.

These have made it to my consistent rotation of  GOOD CLEAN eats.  I encourage you to adapt these into what you love.  I have tried making an oatmeal raisin version by adding more oats and a healthy dash of cinnamon and raisins instead of the chocolate chips yum!  I plan on making a peanut butter and jelly, a carrot cake version and a snickerdoodle version.  Please share your version with the GCH community.

    Saw a link for these on Facebook today and actually got up immediately and went into the kitchen to make them. They are one of the most delicious vegan treats I have ever had. I honestly did a happy dance in my kitchen while chewing the first bite. I will be making them often.
